Ithor Float

An Ithor Float was a dessert dish consisting of jellied cubes and fruit floating in syrup. Whenever the Ithorian antiques dealer Dok-Ondar seemed down, the Artiodac chef Strono Tuggs—who along with Dok-Ondar worked in Black Spire Outpost on the planet Batuu—would make an Ithor Float using fruit from Dok-Ondar's Inner Rim homeworld, Ithor, to provide a taste of home and put a smile on both the Ithorian's mouthes.

Following a culinary tour of the galaxy that he took between 34 ABY and 35 ABY, Tuggs included a recipe for Ithor Floats in his third cookbook, The Ultimate Cookbook, which was published in 35 ABY. The chef also used the dish as an ingredient in two other recipes in the book, Bacta Slush and Thuris Caf, musing that its use in the caf might be one of the few two-for-one deals that Dok-Ondar approved of.

The Ithor Float was created as a recipe for the 2023 Star Wars: The Ultimate Cookbook, a recipe book written by Jenn Fujikawa and Marc Sumerak. The out-of-universe recipe for the dessert makes use of unflavored gelatin, boiling water, evaporated milk, whole milk, granulated sugar, almond extract, lychee, mandarin oranges, and maraschino cherries.
